A Very Vegan Dinner

This week, I had our lovely friend Carissa, who is an avid vegan and health supporter-- I LOVE having amazing, deep talks about organic, non GMO, and how to save the world through our food systems!-- over for dinner. She's brilliant. So we decided that we must have an amazing dinner night of cooking and environmental documentaries!


We made an amazing stir fry of (all organic) zucchini, red bell pepper, eggplant, and kale. All you need is fresh rosemary, sea salt, and olive oil! 
Then we cooked organic red quinoa and added it to the veggies.



I love how simple and easy this is, but yet so yummy and filling! The perfect meal after a long summer day!



To top it all off, I got the most amazing vegan cheesecake on the market. Ridiculously pure, and spectacularly healthy, completely organic, gluten free, dairy free, and made with agave!
