Banana Waffles (killer waffles)


If its one thing I cannot resist is freshly baked waffles in the morning. And the subtle banana sweetness in these is absolutely addicting!-- sorry to those who greatly dislike bananas. You can always replace them with strawberries or blueberries. And you don't even need any sloppy gloppy syrup or butter on them either! I just sprinkled a tiny bit of agave on top, and they were as moist and sweet as can be! They are, as my mom described them, quite the killer waffles! A much lighter and healthier version to the iHop classic xoxoxo



  • 1 cup organic brown rice flour
  • 1 teaspoon baking powder
  • 1 organic egg
  • 1 cup unsweetened rice milk
  • 1 tablespoon agave nectar
  • 1 ripe mashed banana
  • ¼ cup organic softened coconut oil
  • organic walnuts and banana slices for topping


Whisk or beat the egg, milk, banana, agave, and coconut oil until smooth. Then add the flour and baking powder. Combine until a slightly thicker mixture, but still thin and watery. Then, oil your waffle iron with coconut oil, and heat up. Distribute the mix into each section, and cook until brown. Then take waffles out and serve with sliced banana and walnuts on top. Sprinkle a bit of agave for additional sweetening
