Monday Morning Granola

I have been really into a lot of DIY baking lately, because I can never seem to find what I need at the stores. Cookies, breads, and cereals are some of my main complaints, for there are always so much sugar, corn, wheat, and other ingredients I just don't want! And they always run out so fast that we end up making several trips and spending even more money. This time, I decided to make my own granola. Completely gluten free, wheat free, corn free, dairy free, and sugar free! I was pleasantly surprised at how easy it was too. I don't think I will ever want to shop for granola again! (Unless I do find a really wonderful brand) <3


Recipe:
  • 2 cups organic gluten free rolled oats
  • 1/2 cup raw organic pumpkin seeds
  • 1 cup unsweetened organic coconut chunks
  • 1/2 cup organic coconut oil
  • 1/4 cup organic coconut sugar
  • 1/4 cup organic agave nectar
  • 1 teaspoon vanilla
  • a sprinkle of cinnamon
  • organic raisins or other dried fruit
Preheat oven to 350 degrees
Combine the oats, seeds, and coconut in a large mixing bowl. 
Then, melt the coconut oil in a small saucepan, and add in the coconut sugar, agave, and vanilla, and melt together, stirring, till it forms a liquid. Pour this over the oats, and mix well so that it evenly covers the substance.
Oil a medium/large baking sheet with coconut oil, or another spread, and distribute evenly the oat mixture onto it. Bake in the oven for 15 minutes, and until golden brown.


A fantastic treat with milk (or nondairy substitute), yogurt (or substitute), or just by itself! If it is too sweet, put in less sugar or only use one sweetener or the other. Be sure to add your favorite ingredients like nuts and fruit in your granola! I think dried blueberries would be wonderful!
