4th of July Blueberry Pie!

VEGAN, GLUTEN FREE, SUGAR FREE, ORGANIC BLUEBERRY PIE!

Yes I know you are all as excited as I am for the unveiling of my new original recipe. I am a blueberry addict, and my mother and I have made it a tradition to have frozen blueberries with stevia almost every night for dessert. They are-- in my opinion--- the perfect fruit. Not too high in sugar, but still fantastically sweet! And are sooooo good for you, and a great boost for healthy skin. So what better way to incorporate blueberries in your diet but to bake them in a delicious pie? If you're tired of All American Apple Pie, switch it up with this beautiful blueberry pie!



I was ecstatic at how it turned out, not too sweet but sweet enough to still taste like a yummy treat. I am sure this will please any sugar baker, hamburger, BBQers at your 4th party! ;)

RECIPE!

THE FILLING
ingredients:

  • 4 cups organic blueberries
  • 1/2 cups organic coconut sugar
  • 2 tablespoons butter substitute (Earth Balance)
  • 2 handfuls organic chopped walnuts
  • 2 tablespoons agave syrup
  • sprinkle of ground cinnamon
Combine all ingredients except the blueberries and blend together. Then add in the blueberries (washed) and stir until combined and covered with the mixture. Pour the berries into your piecrust and pan, and add your lattice—more on that later! Bake pie in the oven for about 50 minutes, until berries are hot and juicy and the crust is brown. (recipe for crust below)






MY HOMEMADE CRUST
ingredients:

  • 1 1/2 cups organic brown rice flour
  • 1/2 cup cold Earth Balance butter substitute
  • 1 packet organic stevia
  • 5 tablespoons cold water

Mix first dry ingredients (flour and stevia) in a large or medium bowl—electric is preferred. Then while mixing, add in the butter, in separate small sections. This should form small balls in the flour. Then add in the tablespoons of water separately, while mixing. The mixture should be slightly moist.
Pat dough together to form a ball, and place in your pie pan. Knead the dough to form to the outsides of the pan, and so that the edges comes up and over the sides. Pat and spread it out so that it is an even thickness throughout the pan.
Put in freezer for about 50 minutes to keep shape, then take out, and bake for 10 minutes.



THE LATTICE TOP
ingredients:
  • 1 cup organic brown rice flour
  • 1/3 cup organic earth balance butter substitute
  • 1 packet stevia
  • 4 tablespoons cold water
Combine dry, then wet ingredients in a mixing bowl like above. Beat the butter substitute into it, one section at a time. Then add the cold water tablespoons separately while mixing. Take this dough out, and transfer to a flat, lightly floured surface. Knead out into a flat square like shape. When it is level and flat, you can start to cut and separate the dough into separate long pieces. Be sure each piece will cover the length of your pie pan. Take about 4 strips, and lay each piece evenly spread out over the surface of the pie, horizontally first. Then carefully take 4 more and lay them across those, vertically, so that they are at a 90 degree angle crossing them. (unfortunately, it is near impossible to do actual lattice work with the brown rice crust, but this looks just as good anyway!) Bake with the pie for the allotted time above (50 min).

Be sure to cool your pie for 15 or 20 minutes after baking!




What a wonderful treat, and very festive too! Though it doesn't quite come out in perfect pie slices, I think I will definitely keep this as a favorite thing I make. While some people may think that a healthy pie ruins the point, I think that it can only enhance your experience, and make you feel satisfied and happy with what you are eating. So do enjoy!
