Pumpkin Pie-- fall favorite! (Gluten/dairy/sugar-free)


My absolute favorite thing I have made? I'd say that my original recipe for gluten free, dairy free, sugar free pumpkin pie. I have made this so many times, and each more delicious than the last! It always turns out perfectly sweet but definitely not the usual sickening sweetness of pies, but just enough to make you smile and crave more! Very soft and light, with a crust that suits it well indeed. I hope you have success with this recipe too! Let the holidays begin xoxo

Perfect pumpkin pie recipe

Filling:
2 cups organic canned pumpkin (Trader Joes)
1/2 cup goat yogurt
1/4 melted butter substitute (I used Earth Balance)
1 cup organic agave or stevia
1/4 teaspoon sea salt
2 organic cage free eggs
1/2 cup organic rice/coconut/almond milk
1 teaspoon vanilla
1 tablespoon organic ground cinnamon
Preheat oven to 350
Melt butter substitute. Mix ingredients together in a large mixing bowl, then fill into crust.


Gluten Free Wheat Free Pie Crust:
1 1/4 organic brown rice flour (to make a lighter crust, combine the brown rice flour with cocont or quinoa flour!)
1/2 cup butter substitute (Earth Balance tastes great)
1 tablespoon stevia
4 tablespoons cold water

Preheat oven to 350. Combine the dry ingredients, and then cut the butter substitute into smaller two inch pieces and put in the freezer for 10 minutes. Add the frozen 'butter' to the flour in a mixer or food processor one piece of a time while it is mixing. It should form small balls of the flour. Then, while the mixer is running, pour in the five tablespoons of water slowly, and mix. 

Fill the batter into a pie pan, making sure it covers all surfaces evenly and up the sides, and put in the freezer for an hour to harden. Take it out, and cover with a foil sheet and bake it in the oven for 10 minutes. 

Then pour in the filling and bake for an hour, or till when putting a knife in the center it comes out clean. Mine usually take about an hour and a half or two hours for some reason so the time will vary. Just be sure to check it every 10 minutes after the first hour.
