I love homemade pancakes in the morning, but sometimes from scratch just seems like too much work! I have found that Cherrybrook Gluten Free Dreams is a fantastic brand for us gluten less folk. These pancakes are always a huge hit with my waffle loving (and Non gluten free) father, which says that they must be pretty tasty, even if they're also healthy!
The box has very simple instructions, but incase you're like me and prefer to improvise, this is what I did.
2 cups pancake mix
2 tablespoons of melted coconut oil
1 1/2 cup unsweetened coconut milk
Be sure to oil your pan/skillet/grill first, then just pour out the batter into circles spread apart evenly on the surface. Then flip (or like me, loppily use a spatula to murder most of the cakes till your pan and stove top looks like a battle feild of demolished pastries…) and cook each side till they are nice and golden brown.
Mmmm! Serve with organic syrup or agave and goat butter or butter substitute.
