Last week, I was totally craving a Mexican dish, and decided to construct my own healthy tacos for dinner.
This recipe is pretty easy and very fun.
Hope it makes your weeknight even brighter.
1 organic avocado
Gluten free tortillas
goat cheese (or vegan substitute)
organic quinoa (tricolor)
organic meat (chicken, beef, steak) if you would like
So, I stir fried some kale with olive oil till it was nice and crispy. I then cooked the quinoa (1 cup of water brought to a boil + 1 cup of quinoa. Lower the heat to simmer and cover for 10 mins). On the side, I cut and sliced the avocado and tomato into small pieces. When the kale and quinoa were done, I layered them onto a tortilla and added the veggies. Then sprinkled a bit of goat cheese on top. You can add meat for you carnivores out there, but this is a great way to go vegetarian with it. Substitute the goat cheese for vegan cheese for it to be totally vegan.
