What's more 4th of July than pie?
And what's more amazing than gluten free, sugar free, vegan pie???
1 pack organic strawberries
1 cup coconut sugar
8 tbsp. cornstarch
½ slice squeezed lemon juice (optional)
gluten free almond meal
organic walnuts (optional)
Gluten free pie crust
Preheat oven on 400
Wash and slice strawberries into fine bits, then mash them a little in a medium bowl adding the lemon juice. Heat the mashed strawberries in a small pan on medium heat until the juices start flowing—about 7 minutes. In a separate bowl, combine the cornstarch and coconut sugar, then add the heated strawberries and mix. The ingredients should form a thickened paste, but if not try adding more cornstarch.
Fill this into a gluten free pie crust and sprinkle gf almond meal flour on top of the open pie so it creates a sort of topping. Also add walnuts if desired.
Bake in the oven for 20 minutes, or until mixture is thickened and the crust is golden.
Cooking without the normal additives is tricky, so if it doesn't come out perfectly, don't sweat!-- though it is really hot out lately. I'm sure your pie will taste amazing no matter what. I'd much rather have a healthy pie than a pretty one… And no one cares what it looks like once it's in your mouth!
