I hope everyone is having a beautiful holiday week! I made gluten free & dairy free waffles for my family Christmas morning and I wanted to share my recipe with you all. Read on for full details.

This lovely little French serving set was a Christmas present from a dear friend. I just adore the bright colors and hand painted details. The inscription on the ladle translates roughly as "to make the good cakes", and I love anything French. The set can be found at Anthropologie and I highly recommend going and get yourself one!

For 6 waffles:

2 cups pf Namaste Foods Gluten Free Waffle and Pancake Mix

3/4 cup unsweetened coconut milk

2 tablespoons earth balance butter (melted)

2 organic eggs (or flax seed vegan substitute)

2tsp organic ground cinnamon

1/4 cup organic walnuts

First, be sure to preheat and oil a waffle iron. 

Mix together all the wet ingredients-- everything but the flour-- and then slowly combine it with the waffle mix. Stir together until it creates a batter and then add in the cinnamon and walnuts. Then slowly add the batter into the waffle iron and let it cook until they are brown and crispy like the ones in the picture.
