Glutenfree & Vegan Lemon Poppy Seed Muffins

 Loveliest treat for a winter morning!
These little muffins are some of my favorites, I love the sweet tangy flavor of the seeds and lemon zest.

Ingredients:
1 Package of Wholesome Chow Organic Lemon Poppy Seed Muffin Mix
1/2 cup organic coconut oil
1/3 cup organic coconut milk
2 tbsp organic squeezed lemon juice

Now let me just say something about Wholesome Chow.

Process:
Preheat oven 350
Melt the coconut oil and mix the three wet ingredients in a medium sized mixing bowl. Then then add in the mix (all of it), and whisk or stir until it creates a smooth batter.
Spray a muffin pan with coconut oil spray (found at Trader Joes) and spoon in the batter to about half way in each cup. 
Put in the muffins and cook for about 15-20 minutes-- be careful because they cook pretty quickly!
