Mug Cake for Cozy Days
I have fallen quite in love with mug cakes.
A 5 minute desert in my favorite container! Read more for my gluten free, vegan, and sugar free recipe on a rainy winter day.
I made this little treat for my mom's birthday last week and she just loved this light little desert in a cup! It's honestly the most ingenious and cutest thing I've ever seen.
· 4 tbsp gf flour—2 coconut flour + 2 gf all purpose flour
· 3 tbsp coconut sugar
· vegan egg sub (1/4 cup water + 1tbsp ground flax seed)
· 2 tbsp coconut milk (or non-dairy sub)
· 2 tbsp melted coconut oil or olive oil
· 1 tsp baking powder
· pinch of salt
· 2 tbsp vegan chocolate chips
In a large/medium mug, mix first the vegan egg mixture and let harden. Then, add in the milk, oil, flours, and baking powder and mix very well. Be careful here because some flour can get stuck to the sides of the mug and totally ruin the cake. So stir very well! Then add in your chocolate chips and mix.
Stick your mug in the microwave for about 1:30—this is what it took me but other recipes recommend only 60 seconds (depending on level of heat).
Enjoy this gooey treat on a rainy day—perfect for a December breakfast in bed!
Love my Starbucks twin set of LA & NYC mugs! I consider these two cities my two homes across the country. Definitely perfect for a bi-coastal girl like me!
