I made this little treat for my mom's birthday last week and she just loved this light little desert in a cup! It's honestly the most ingenious and cutest thing I've ever seen.
· 4 tbsp gf flour—2 coconut flour + 2 gf all purpose flour
· 3 tbsp coconut sugar
· vegan egg sub (1/4 cup water + 1tbsp ground flax seed)
· 2 tbsp coconut milk (or non-dairy sub)
· 2 tbsp melted coconut oil or olive oil
· 1 tsp baking powder
· pinch of salt
· 2 tbsp vegan chocolate chips
In a large/medium mug, mix first the vegan egg mixture and let harden. Then, add in the milk, oil, flours, and baking powder and mix very well. Be careful here because some flour can get stuck to the sides of the mug and totally ruin the cake. So stir very well! Then add in your chocolate chips and mix.
Stick your mug in the microwave for about 1:30—this is what it took me but other recipes recommend only 60 seconds (depending on level of heat).
