Southern classic with a healthy twist

For the Chicken:
4 pieces organic chicken wings
2 organic eggs
1/4 cup gluten free almond meal
1/4 cup organic brown rice flour
Mix up the eggs and flour until it makes a paste or a light batter. Then dip the wings in one at a time, covering all around with the mixture. Place the wings in a heated and oiled pan with room between each one. Cook until brown and crispy-- be sure to check if the insides are done or if they are all pink because they take a while to cook thoroughly.
My zucchini side:
1 large organic zucchini
raw pumpkin seeds.
Now this isn't the typical side of fries, but I really like the way the lightness of the zucchini compliments the heavy breaded chicken.
So to start, again oil a sauteing pan with olive oil and heat on low. Then wash and chop the zucchini into fairly thin slices. Add them into the pan along with some pumpkin seeds and stir until the seeds are slightly brown and the zucchini is soft. Then spoon them out into a bowl and shave some Parmesan on top-- don't forget a topping of sea salt!
