Gluten free, vegan whoopie pie? Sounds like wonderland.

Wholesome Chow

cake mix and icing. It's tea time!!!

Cakes:

  • 1 package of Wholesome Chow's GF Lavender Cake Mix
  • 1 1/4 cup coconut milk
  • 1/4 cup coconut oil (melted)

Preheat oven to 350 degrees

Combine the wet ingredients and then slowly mix in the cake flour until it comnines smoothly. Spoon in the batter into a mini-cake pan. Put the cakes in the oven for about 20 minutes and then take out and cool for about 15. When cool, flip the pans and pound out the cakes inside on a paper towel for icing.

Icing:

1 package of Wholesome Chow vegan vanilla icing mix

1/2 cup Earth Balance vegan butter

1 tsp coconut milk

In an electric mixing bowl, beat the butter until it becomes smooth (about 1-2 minutes). Then add in the coconut milk and the icing powder. Stir it all together until it forms a thick paste.

Spread an even amount of icing on one side of each cake. Then sandwhich two cakes together to form your pie!
