Lavender Chocolate Petite Fours (glutenfree and vegan)
Ever since I was a little girl, dressing up like a fairy and having tea with the royal court in the garden, I have loved
A beautiful little french word that pretty much just means a small cake, they are the perfect desert for dainty occasions.
Unfortunately, I have not been able to eat them since none are made without dairy, sugar, or gluten.
So... I made some myself!
Check out my recipe below featuring
lavender chocolate cake mix.
- 1 package of Wholesome Chow's GF Lavender Cake Mix
- 1 1/4 cup coconut milk
- 1/4 cup coconut oil (melted)
Preheat oven to 350 degrees
Combine the wet ingredients and then slowly mix in the cake flour until it comnines smoothly. Oil a cupcake (mini cupcake is desirable) pan with coconut oil spray. Spoon in the cake mix until each cup is 2/3 full. Then stick them in the oven for about 20 minutes (give or take a few), take out when done, and then let cool until they have hardened. Then turn the pan over and lay each cake out evenly in order to be iced.
- 1 package of Wholesome Chow vegan vanilla icing mix
- 1/2 cup Earth Balance vegan butter
- 1 tsp coconut milk
In an electric mixing bowl, beat the butter until it becomes smooth (about 1-2 minutes). Then add in the coconut milk and the icing powder. Stir it all together until it forms a thick paste.
This is literally the best icing I've ever had in my life.
Of course it's not sugar free, so just take a little dollup and ice the top of the cakes.
MMMM I just love this mini treat!!! Best served with your favorite pot of tea.
