Vegan Gluten-Free Orange Easter Cake

For both my dad's birthday and an Easter celebration, Orange cake is always a good idea.

For a super healthy but low maintenance cake, I used both a mix and frosting from Wholesome Chow, an awesome organic company that makes all gluten free organic treats and mixes that are to die for!

Check out my step by step recipe below for a yummy bunny desert.

Cake:

  • 1 wholesome chow vanilla cake mix
  • ΒΌ cup coconut oil
  • 1 ΒΌ cup coconut milk
  • 1 tsp apple vinegar cider
  • 1 tbsp orange zest
  • 1 tsp orange juic

Preheat oven to 350 and oil a medium sized cake pan. Combine milk and cider in a medium mixing bowl, stir, and let sit until foamy. Then add in the melted coconut oil and whisk well. Now, combine in the flour. Stirring well, fold in about 1 tablespoon of orange zest and about 1 teaspoon of orange juice. Pour the mix into the pan and bake in the oven for 20-25 minutes.

Frosting:

  • 1 wholesome chow chocolate frosting mix
  • Β½ cup earth balance vegan butter
  • 3 tsp coconut milk
  • orange zest

Beat the butter in a mixer for about 1 minute. Then add in the frosting mix and milk while the electric mixer is going on a medium speed, and let it stir for about 5 minutes or until the mix is smooth. Then grate in orange zest to taste.

When the cake is done, take it out and let it cool either on a cooling rack, or for faster and more effective cooling, in the fridge for about 15 minutes. Then turn over the pan and plop the cake onto a plate. When the surface is cool, you may apply a thick layer of your frosting all the way around the cake top and sides. Add orange zest and other fruit for additional treatment.
