Vegan Burrito Bowl
Yes, I'm obsessed with vegan Mexican dishes. Honestly all I eat anymore is avocado, beans, and rice. But its so good, healthy, and easy, how can I resist???
Anyway, here's my recipe for an amazing Burrito Bowl for us gluten free people that will have you saying "Si si si!!!"
Vegan burrito bowl
- 1 can organic refried beans
- 1 cup organic brown basmati rice
- organic butter lettuce
- 1 organic tomato
- 1 organic avocado
- 1/4 of an organic white onion
- Daiya cheddar vegan cheese
Cook rice in 1 ¾ cups of water. Bring to a boil in a medium sauce pan and cover for 30 minutes on low heat.
Wash and dice the tomato, chop the onion, and mash the avocado. Then, mix the ingredients in a medium mixing bowl and set aside.
When the rice has cooked for about 20 minutes, heat up the beans in a small sauce pan over medium heat and stir. When the rice and beans are done, fill a plate with chopped lettuce, and then pour in rice, beans, and the guacamole on top. To finish, sprinkle cheese on top to taste.
