Anyone who doesn't like asparagus, this recipe will absolutely revolutionize the way you see these stalky green vegetables. I myself was wary of eating a soup made of asparagus, but honestly, I cannot tell you how AMAZING this soup is! Recipe courtesy of my <MOM> who is a health food genius herself. Follow our step by step tutorial below and prepare to be pleasantly surprised!
- 1 bunch of organic asparagus
- Light organic coconut cream
- Curry powder
- Sea salt
- Parmesan cheese or vegan substitute
Wash the asparagus and cut off the ends.
Pour 2 cups of water into a medium sauce pan and boil the asparagus so that they are soft. Add coconut oil to the pot for more effective softening.
Pour in the boiled water and the softened asparagus into a blender and add 1/2 cup of coconut creamer.
Once the mixture is completely blended and smooth, stir in some organic curry powder, sprinkle on some parmesan, and don't forget to add sea salt!
